Butternut Squash, Potatoes, onions, ham, pork loin, corn and green pepper make this chowder-CHOWLICIOUS!! (see pics at bottom).

CORN CHOWDER CUBAN STYLE-GUISO DE MAIZ

Have this with some crusty bread …make it this weekend! Great soup when it is cold or rainy outside.

1 lg onion, chopped

1 lg green pepper, cut in strips

4 cloves, garlic, minced

Half of an 8-oz can of tomato sauce

2 bay leaves (opt)

1 lb pork loin, cut in 2-in pieces

½ lb smoked ham, cut in 2-in small pieces

2 Tbls Olive oil

2 med- size potatoes, peeled and cut in 8 pieces

1 butternut squash, peeled and cut in 3-inch squares

2 cups chicken broth

2-15 oz cans whole kernel corn

1-15 oz can cream style corn

2 ears fresh or frozen corn cut in 2 inch pieces

Salt and pepper to taste

Heat oil in a heavy bottomed 6 quart pot. Brown pork cubes. Add chopped

onion, green pepper, garlic, bay leaves, and tomato sauce. Cover and simmer unitl

pork is tender. Add broth, potatoes, squash, and ham. When potatoes and squash are

tender, add canned corn and fresh corn. Cook for 5 minutes, stirring frequently so

corn will not stick to bottom of pot. Salt and pepper to taste. Serves 6 big portions.
