Fasoulea bi Limon (Citrus Green Bean Salad) “Nile Style” Cookbook

6 Servings

1 # Green Beans, ends trimmed

2 Tablespoons olive oil

Juice and grated peel of 1 lemon

1 Tablespoon finely chopped fresh parsley

1 Tablespoon finely chopped fresh mint(I used dill as an alternative)

1 Tablespoon finely chopped fresh oregano or thyme

Salt to taste

Freshly Ground Black Pepper

Place green beans with water to cover in a large saucepan over medium heat. Bring to a boil, reduce heat to low, and simmer, uncovered until tender, approximately 15 minutes. Remove from heat, drain, and place in a large bowl full of ice water. Let stand for 5 minutes.

Place olive oil, grated lemon peel, lemon juice, parsley, mint, oregano or thyme, and some salt and pepper to taste in a small bowl, Whisk well to combine. Drain green beans and toss with dressing. Pour onto a serving platter.
